This quick and easy one-pot recipe is perfect for weeknight dinners. Lemon and shrimp create a fresh and flavourful orzo dish. The Brothery chicken bone broth kicks up the flavour and nutritional profile of this fresh and delicious recipe.

Ingredients

1 jar The Brothery Chicken Bone Broth

1 lb uncooked shrimp, deveined and peeled

2 Tbsp olive oil

1 medium onion, diced

14oz can diced tomatoes
-
8 oz orzo pasta

2 Tbsp minced garlic
-
Salt and pepper to taste

1 lemon
-
1/4 cup parmesan, grated

1 Tbsp oregano
-
1/2 cup peas (fresh or frozen)
Directions
Heat olive oil in large saucepan on medium-high heat. Add garlic, onions, salt, pepper, and oregano. Sauté for 3-4 minutes.
Add orzo and stir until lightly brown. Add entire jar of The Brothery Chicken Bone Broth, tomatoes, peas, and shrimp. Stir.
Bring to a boil. Once boiling, cover with lid and reduce to medium heat. Simmer for 20 minutes or until the majority of liquid has reduced.
Remove from heat, top with parmesan cheese, and serve!
